Ingredients

1 Tbsp olive oil
80 g shallot
40 ml dry white wine
200 g Arborio rice
2 pinches of saffron
  salt, as needed
  pepper, as needed
500 g beef stock, hot
50 g Parmesan


Instructions

STEP 1/6

Attach the Stir Tool and Stir Assist Clip.
Add olive oil to the Cooking Chef XL Bowl.
Lift the Cooking Chef head and fit the heat shield.
Heat with splashguard fitted – 120°C, Stir 1.

STEP 2/6

Add shallot to the bowl.
Cook with splashguard fitted – 5 min, 120°C, Stir 1.

STEP 3/6

Add Arborio rice to the bowl.
Cook with splashguard fitted – 5 min, 110°C, Stir 1.

STEP 4/6

Add dry white wine to the Cooking Chef XL Bowl.
Cook with splashguard fitted – 2 min, 104°C, Stir 1.

STEP 5/6

Add salt and pepper, saffron and beef stock to the bowl.
Cook with splashguard fitted – 18 min, 104°C, Stir 2.

STEP 6/6

Add Parmesan cheese to the Cooking Chef XL Bowl.
Cook with splashguard fitted - 1 min, 90°C, Stir 1.
