Stout and Chocolate Cupcakes

These rich and delicious cakes are topped with a light cream cheese frosting.

Ingredients

Servings: 12

For the cakes
250 ml stout
2  eggs
1 Tbsp vanilla extract
150 grams sour cream
2.5 tsp bicarbonate of soda
275 grams plain flour
250 grams unsalted butter, melted
75 grams cocoa powder
400 grams caster sugar

For the topping
300 grams cream cheese
150 grams icing sugar
125 ml whipping cream


Instructions

STEP 1/5

Fit the K beater to the machine.

Preheat the oven to 180ºC.

Line the cupcake tin with cupcake cases.

STEP 2/5

Add stout, butter, cocoa powder and caster sugar into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 1 for 2 minutes.

STEP 3/5

Add sour cream, eggs, and vanilla to the bowl.

Mix on speed 2 for 1 minute.

STEP 4/5

Add flour and bicarbonate of soda into the bowl.

Mix on speed 2 for 1 minute.

Evenly spoon the batter into the cupcake cases.

Bake for 15 minutes at 180ºC.

Leave to cool on a wire rack.

STEP 5/5

Retrieve, clean the Mixer bowl and fit the Whisk tool.

Add cream cheese, icing sugar and cream into the Mixer bowl.

Attach the Mixer bowl to the machine and fit the splash guard.

Mix on speed 5 for 1 minute.

Spoon the icing onto the cakes.

Serve.
