Ginger Marmalade

Ingredients

1000 ml water
400 g fresh ginger, peeled, finely sliced
750 g caster sugar
90 ml liquid pectin
20 ml lemon juice


Instructions

STEP 1/2

Lift the Cooking Chef head and fit the heat shield.

Attach the Mixer bowl to the machine.

Add water and ginger into the Mixer bowl, fit the splashguard.

Heat at 98°C for about 1 hour, 15 minutes.

Strain the contents of the Mixer bowl, reserving the ginger and water.

STEP 2/2

Retrieve, clean the Mixer bowl and fit the Stir Tool and Stir Assist Clip.

Add the ginger and 100 ml of the reserved water into the Mixer bowl.

Add sugar, pectin and lemon juice into the Mixer bowl.

Cook at 104ºC, on speed Stir 2, for about 20 minutes.

Turn the speed to Min.

Spoon the foam from the marmalade.

Divide the marmalade between 4 sterilised jars.

Leave to cool.

Use as required.


Store in fridge once opened.
