These deliciously light lemon-flavoured doughnuts are a gorgeous treat for you and your other half. Enjoy them plain, filled with jam or go all out and dip them in chocolate sauce.

Method

  1. Fit your Kenwood kMix with the dough hook attachment. Add the flour, sugar, salt, yeast, and lemon zest to the bowl.
  2. Melt the butter and add to the room-temperature milk.
  3. Add this to the flour mixture along with the yolks and vanilla, and mix for 8-10 minutes until smooth and elastic.
  4. Remove dough and place in a greased bowl, cover and prove until doubled in size.
  5. Once proved, turn the dough out onto a floured work surface and knead to knock back.
  6. Roll to a thickness of 2cm, and using a medium shaped (6cm) heart cutter, cut out 10 heart-shaped doughnuts.
  7. Place these on a lined tray and cover and prove for 40 minutes.
  8. Heat the oil in your fryer/pan to 180C.
  9. Carefully place the doughnuts in the hot oil, cooking in batches to keep the oil hot.
  10. Cook on each side for approx. one minute, remove, drain on kitchen paper and gently toss in caster sugar.
  11. Best enjoyed on the day you make them, plain or with some berry jam.
