The perfect appetizer for any occasion - sumac prawns with lemon juice and pepper. A sensational burst of tropical flavours.
Ingredients
6 Large prawns
1 Lemon (Zested + Juiced )
2 tablespoon of Sumac
1 tablespoon of Black peppercorns
2 tablespoon of Butter
Banana leaf or Parchment paper

Method
Toast the lemon zest in a small pan over a very low heat for 10 minutes until dried.
Add the pepper corns and toast until the smell starts to waft out.
Blitz the Lemon pepper in the spice grinder attachment for the Kenwood Multipro Compact+ food processor.
To same pan add the butter and melt over a low heat (we don’t want the butter to brown). Add Lemon pepper, sumac and lemon juice and stir until melted.
Lay prawns on the banana leaf or baking parchment or tin foil over a medium heat.
