The perfect appetizer for any occasion - sumac prawns with lemon juice and pepper. A sensational burst of tropical flavours.

Method

  1. Toast the lemon zest in a small pan over a very low heat for 10 minutes until dried.
  2. Add the pepper corns and toast until the smell starts to waft out.
  3. Blitz the Lemon pepper in the spice grinder attachment for the Kenwood Multipro Compact+ food processor.
  4. To same pan add the butter and melt over a low heat (we don’t want the butter to brown). Add Lemon pepper, sumac and lemon juice and stir until melted.
  5. Lay prawns on the banana leaf or baking parchment or tin foil over a medium heat.
  6. Brush with the butter and season with salt.
  7. Grill until cooked throughout.
