A light lemon biscuit, simple to make, gluten free and delicious when served with a cup of tea.

  1. Fit midi blade to kCook bowl
  2. Add rice flour, cornflour, baking powder, golden caster sugar, butter, lemon zest, lemon, egg yolk, vanilla extract, salt and milk to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Mix with filler cap fitted - 2 min, speed 8
  6. Chill in fridge - 1 hr
  7. Pre-heat oven - 170°C
  8. Line a clean baking sheet with parchment paper
  9. Shape into balls
  10. Transfer dough to baking sheet
  11. Flatten
  12. Bake until golden brown - 18 min, 170°C
  13. Transfer onto cooling rack
  14. Serve
