Italian meringue is so easy to make in the Cooking Chef XL, we have developed a unique all in one method and a built-in preset for use with the quantities in this recipe. The resulting meringue has a soft, glossy finish that does not require baking in an oven, instead it can be finished with a blow torch or under a hot grill. This recipe makes enough meringue to fill a 20 cm/ 8-inch tart case or to finish ten mini tarts with meringue. Italian meringue uses double the amount of sugar to egg white, so if you require a larger amount, you can double the quantities in this recipe and increase the cooking time by 2-4 minutes.
