Making your own soft cheese at home with surplus milk is so easy using the Kenwood MultiPro Go food processor. You can whip it up into a light herb and garlic spread, great with crackers or a dip for vegetables.

  1. Slowly heat your milk in a pot until it begins to foam, but not boil.
  2. Remove from the heat and add your lemon juice, vinegar, and salt.
  3. Leave it in the pot for 10 minutes, the curds will separate, then pass through a thin cloth.
  4. Leave it for 30 minutes to strain. Keep the whey from this, it’s great added to smoothies or even homemade soups for that extra protein and ensure there is no waste.
  5. Once the ricotta is made, then chill in the fridge for at least 30 minutes. Add 1 glove of garlic and a handful of coriander to your Kenwood food processor and blend until chopped, then add in your ricotta and a pinch of salt and blend until light and creamy.
