Chocolate and Cherry Ice Cream Sandwiches

A classic flavour combination in an ice cream sandwich! If you want to up the chocolate, try adding chocolate chunks into the ice cream. You can freeze the cookies in portions so you can have ice cream sandwiches whenever you like, just bake the frozen dough for a couple minutes longer. Remember to place the bowl in the freezer 24 hours in advance.

  1. Place the Frozen Dessert Maker attachment in the freezer 24 hours in advance
  2. Add the ingredients into a clean saucepan
  3. Heat until near boiling – medium heat
  4. Strain the mixture into a jug and let cool
  5. Fit the Whisk Tool
  6. Add the ingredients into the appliance bowl and fit the splashguard
  7. Mix then scrape the sides of the bowl – 2 minutes, speed 4
  8. Mix – 2 minutes, speed 4
  9. Carefully pour the milk mixture into the appliance bowl
  10. Mix – 3 minutes, speed Min
  11. Pour the custard mixture back into the saucepan
  12. Heat until the custard is thick enough to coat the back of a spoon – medium heat
  13. Chill the custard in the fridge – 1 hour
  14. Add the ingredients into a clean saucepan
  15. Heat stirring often until reduced a bit – about 10 minutes, medium heat
  16. Slightly squash the cherries
  17. Add the ingredients into a small bowl and mix until combined
  18. Pour the cornflour mixture into the cherries
  19. Cook stirring often until thick – about 5 minutes, medium heat
  20. Set aside and let cool
  21. Remove the custard from the fridge
  22. Pour cherry puree into the chilled custard and stir until combined
  23. Attach the Frozen Dessert Maker attachment to the machine
  24. Start the machine - speed Min
  25. Pour the custard mixture into the Frozen Dessert Maker
  26. Mix – 30 minutes, speed Min
  27. Transfer the mixture into an airtight container
  28. Cover with a lid and freeze overnight until solid
  29. Making the cookies
  30. Line a baking tray with parchment paper
  31. Clean the appliance bowl and fit the K-Beater
  32. Add the ingredients into the appliance bowl and fit the splashguard
  33. Mix – 3 minutes, speed 1
  34. Add the ingredients into the appliance bowl
  35. Mix – 1 minute, speed 1
  36. Add the ingredients into the appliance bowl
  37. Mix – 1 minute, speed 1
  38. Line a worksurface with plastic wrap
  39. Place the dough onto the plastic wrap
  40. Shape the dough into a log and wrap with the plastic wrap
  41. Chill in the fridge – 30 minutes
  42. Preheat an oven to 190ºC
  43. Remove the dough from the fridge and remove the plastic wrap
  44. Slice the dough into 1.5 cm pieces and place them onto the prepared baking tray
  45. Bake – 12 minutes, 190ºC
  46. Remove from the oven and let cool completely
  47. Place one scoop of ice cream between two cookies
  48. Repeat with the rest
  49. Serve
