Chicken Liver Parfait

This is a classic from the restaurants of the 90's. It's really quite easy to make and can take the pressure away from the dinner party as it should be made the day before and stored in the fridge.
Ingredients
- 30g Shallots
- 3 Garlic Cloves
- 30g Butter
- 1 ½ tsp Paprika
- 1 ½ tsp Mace
- 45g Sherry
- 2 Eggs
- 3 tsp Salt 3 tsp
- 3 tsp Ground black pepper
- 45g Cognac
- 750g Chicken livers
- 100ml Whipping cream
