A simple vegetable like a carrot can be transformed into this decadent dessert or what we call as a sweet in India. It’s so simple to make and very few ingredients are needed but the taste is just so delicious. This sweet can be made on multiple occasions and on festivities in India like Diwali. You can serve it warm or cold, when serving warm you can even pair it with vanilla ice cream, so delicious!

  1. Wash and peel the carrots, using the smaller grater blade attachment in your Kenwood MultiPro food processor grate the carrots.
  2. In a small pan heat 1 tbsp of ghee, fry the almonds, cashews, pistachios and raisins for 2 to 3 minutes and set aside.
  3. In a large heavy-bottom nonstick pan add the grated carrots and milk, on medium-low heat bring it to a boil and reduce the heat let it gently simmer, stirring every few
    mins.
  4. You'll notice the carrots will cook in the milk and the milk will begin to reduce. This process might take around 30 mins. Add the 3 tbsps. of ghee, sugar, cardamom powder and saffron. Keep stirring until it continues to reduce and you will notice the milk fat will start to separate.
  5. Now add the dry fruits along with the rest of the ghee from the pan. The carrots
    should have been cooked in milk at this stage and will separate from the pan.
  6. Let it cool, serve warm with a dollop of vanilla ice cream or can be served cold too.
  7. Enjoy!
