Snowball Truffles

These truffles would make a great treat with an after Christmas dinner coffee.

Ingredients

50 g blanched almonds
50 g blanched hazelnuts
3 Tbsp desiccated coconut
1 Tbsp icing sugar
60 g white chocolate
75 g whipping cream

To finish
2 Tbsp desiccated coconut
1 Tbsp icing sugar


Instructions

STEP 1/6

Fit the Knife Blade to the Food Processor bowl.

STEP 2/6

Add nuts into the Food Processor bowl.

Attach the lid and ensure it is locked into place.

Pulse the mixture until the nuts are coarsely chopped.

STEP 3/6

Add coconut and sugar into the Food Processor bowl.

Pulse the mixture until everything is finely ground.

Transfer into a medium bowl.

STEP 4/6

Add chocolate into the Food Processor bowl.

Mix on speed 3 until finely chopped.

STEP 5/6

Add cream into the saucepan.

Bring the cream to the boil.

Pour the cream into the bowl.

Stir until everything is melted and combined.

Chill in the fridge for 1 hour.

STEP 6/6

Add coconut and icing sugar into a small bowl.

Mix until combined.

Roll the chocolate mixture into balls.

Roll each ball in the coconut and icing sugar.

Chill overnight.
