Move over peanut butter. With its greenish hue and uniquely sweet nutty flavour, pistachio butter is a tasty alternative that is just as versatile. High is healthy fats, protein, and fibre, it’s also incredibly easy to make.

Nut butters can also be used in baking to add an extra flavour dimension to granola bars, biscuits, brownies and energy balls, or used to make dressings and marinades. Or just enjoyed straight from the jar.

How to make homemade pistachio butter

Fit the knife blade to your food processor and add the pistachios and water to the bowl. Attach the lid and ensure it’s locked into place.

Blend on speed Max for 45 seconds. Stop and scrape the sides of the bowl down before blending on speed Max for a further 30 seconds. If you prefer a smoother consistency, repeat.

Transfer the contents into a clean jar and serve. It can be stored in a jar in the fridge for several months.

  • You can use raw or roasted pistachios to make pistachio butter. Roasting the nuts makes it easier for them to release their oils, which can make processing easier. It also helps to enhance their flavour, giving your nut butter a lovely, toasted taste.
  • Avoid using salted pistachios. You can always add sea salt to taste if you want.
  • There’s no need to add any oil when you’re making this pistachio butter. As you blitz the pistachios in your food processor the nuts’ natural oils are released, creating that wonderfully creamy consistency.
  • Blend in intervals so you stay in control of the consistency, scraping the sides of the food processor bowl each time to ensure an even mix.
  • Add some honey, maple syrup or agave to sweeten your pistachio butter, or you can flavour it with ingredients like matcha powder, cinnamon or vanilla extract. For a superfood boost, try mixing in some chia, sunflower or flax seeds.
